COMMISSARY KITCHEN CASE STUDY
Background: One of the fastest growing Saudi owned and operated restaurant groups in the country with an ambitious growth and expansion strategy. The company is committed to innovation and excellence in restaurant development and food service with a vision to change the face of QSR, fast food and the restaurant industry in Saudi Arabia and across the region.
The A&C team is tasked to revolutionize their commissary kitchen, a design that will help them to meet their future goals, a less cost and a highly efficient productive kitchen.
Objective: To design and simplify kitchen equipment, layout and processes.
Work undertaken: A&C team sat with the client to conceptualize and understand their current and future condition which involves defining the objectives and goals.
Designers went to the existing commissary kitchen to inspect and to understand the current infrastructure and production processes as they conceptualize:
Identification of Products that will be in-house manufactured and toll processed.
Determine the present (baseline) and projected the quantity of all products.
Review current manufacturing processes and recommend improvements.
Outcome: A&C Associates provided a comprehensive plan on the creation of new commissary kitchen which includes the following:
